Banana Oat Pancakes

I sat here for a while wondering what my first post would be about. I came up with all these over the top ideas that would either…

A.) Grab your attention and keep you entertained for days.

or

B.) Scare you away forever.

Instead of stressing myself out over the “perfect” first post – which, by the way is supposedly a very common thing for first time bloggers to do – I figured I would give you a glimpse of what my recipe blogs may look like. Of course they will evolve over time, but we all must start somewhere.

 

 

Banana Oat Pancake:

  • Two ripe bananas
  • 1 ½ cups of oats
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 cup frozen blueberries
  • A handful of chopped strawberries
  • 2 tbsp. pepitas
  • 4 tbsp. PB2 powder
  • 4 tbsp. maple syrup

Directions:

For the pancakes, mash the bananas with a potato masher or spoon until nice and smooth. Add in the oats, cinnamon and vanilla, mix until well combined. On a nonstick pan heat to medium. Scoop out about ¼ cup of batter and form into a round pancake and place on the pan, cook each side for about 2-3 minutes. Do this until you have cooked all your pancakes and there is no batter left (makes about 6 small pancakes).

For the toppings, in a bowl cook the blueberries in the microwave for about 2-3 minutes (half way through stir the blue berries). If you prefer not to use the microwave you may also heat them in a small sauce pan. This will create a warm, sweet syrup. Pour blueberries over the pancakes. Next, in a small bowl, mix the PB2 powder and maple syrup together which creates a caramel like topping. Layer this over the blueberry pancakes, top the rest of it off with strawberries and pepitas.
