This salad is refreshing and super simple to make!
I am starting school soon and figured I should start experimenting with simple but healthy meals that are easy to take on the go! This is the first recipe but stand by, more will follow soon!
My preferred way of eating this is cold, with hummus and toasted tortillas. Honestly you can eat this however you’d like; in a wrap, by itself, or spread it over a bed of lettuce.
- 2 cups cooked quinoa
- 1 can chickpeas (drained and washed)
- 1/4 cup chopped sweet onion (any onion will work)
- 1/2 red bell pepper (chopped)
- 1/2 green bell pepper (chopped)
- 1/2 cup cherry tomatoes (chopped)
- 1/4 tsp garlic powder
- 2 tbsp dried parsley
- 1 tsp dried basil
- 1/3 cup lemon juice
- 2 tbsp olive oil
In a large mixing bowl add the quinoa, chickpeas, red bell peppers, green bell peppers, onion, and tomatoes. Mix the ingredients together until well combined. Drizzle the oil over the mix and slowly add the lemon juice and all the seasonings. Mix them into the ingredients. Add quinoa & chickpea salad to a container with a lid. Refrigerate for about 2 hours or until cold, eat and enjoy!
