What I Eat In A Day (VEGAN)

Hello! 

Welcome back everyone, it has been quite some time. Life has been more than crazy, and that should not be an excuse but let’s be real, sometimes we get busy. We’ve had a recent move, then a week or so later our state was interrupted by a rather large and fierce woman named Irma who stormed in like a hurricane (literally). My husband and I made out fine, as well as our family and friends. It is taking some time for all of Florida to get back to normal, but it’s getting there.

 

This past weekend, I decided to spend some time with my family. We now live about 2 hours away from my parents rather than 20 minutes, but the drive is always worth taking. Especially because I am fortunate enough to have a mother who is such an amazing cook and always caters to our vegan lifestyle.

 

I’ve seen vegan vloggers create “What I Eat In A Day” videos but I haven’t seen many bloggers take that route. I wanted to create a post that was real enough for anyone curious as to what vegans eat throughout the day to understand. I tried my hardest to document my entire day for you all. There was a couple things that I missed because I was immersed in family interactions, but I will definitely make sure to fill in the left out details!

 

Tropical Swamp Juice 

  • Bananas
  • Strawberries
  • Blueberries
  • Spinach
  • Hawaiian Spirulina
  • Hemp Milk
  • Vanilla
  • Hemp Seeds
  • Chia Seeds
  • Water

I start most mornings off with a smoothie of some sort. This one has been my favorite recently. Don’t let the name fool you, it may look like swamp water but it taste like a tropical dream.

 

Nori Salad Wraps

  • Nori Sheets
  • Romaine
  • Spinach
  • Carrots
  • Onion
  • Green Peppers
  • Zucchini
  • Avocado
  • Dill
  • Lemon Juice
  • Apple Cider Vinegar
  • Garlic Powder

I ate this about an hour after consuming my smoothie. Raw foods tend to make me feel my best. For me, a combination of raw and cooked foods seem to work best for my body. I have suffered with digestion issues for a good part of my life. Sticking with raw foods in the morning and then moving on to cooked foods later on in the day typically what my body handles the best.

 

SNACKS

  • Peanuts
  • Lays

Okay, okay…maybe chips (especially Lays) are not the most nutritious snack out there. We had just arrived to my parents house after what felt like a long car ride. I was hungry and I ate the crumbs from the bag. I guess you can say I made up for it by throwing in some peanuts; What…is that not how it works?

 

VEGAN BAKED ZITI

Honestly, I would write down all the ingredients but I’m not exactly sure what was in it. My mother made this dish for everyone. All I know is that it was vegan and delicious. This is actually the same pasta dish that my mother had made for my wedding. That everyone (all non-vegans included) devoured.

 

I did not take a photo of everything else that was served for dinner, I was caught up with family and hunger. I will be glad to share what was included.

  • Eggplant Parm
  • Garden Salad
  • Artisan Rolls
  • Baked Ziti

 

Dessert

So-Delicious! My family knows how to do it up! The six of us (mother, father, husband, sister, nephew, and I) shared a variety of four different flavors.

The flavors as listed from favorite to least favorite:

  • Cookie Dough (coconut)
  • Mocha Almond Fudge (coconut)
  • Dark Chocolate Truffle (cashew)
  • Chocolate Peanut Butter Swirl (coconut)

  3. I enjoyed cooking the vegan recipes with your mother from your wedding day and I’m very impressed with your venture on web site and recipes. I try to eat healthy but maybe vegan is a little to extreme for me. However, I did see a few of your recipes that interested me and I will try. I wish you the best…all our love !
