Creamy Vegan Pumpkin Pasta

Hello, my fellow pumpkin lovers!

Happy first day of fall, if you’ve been waiting all year for an excuse to embrace your inner pumpkin loving self than I have a recipe for you. This pasta is creamy and tastes exactly how you’d imagine fall tasting (like a pumpkin, duhhh). I hope that you give this recipe a try for the sake of your taste buds, trust me they will be thanking you!



  • 1 cup raw cashews
  • 1 tbsp fresh lemon juice
  • 1/4 cup water
  • 8 oz box of gluten-free pasta or pasta of your choice
  • 2 garlic cloves finely chopped
  • 1 cup sliced baby portabello mushrooms
  • 2 big handfuls of spinach
  • 1/2 cup pumpkin pie mix (Make sure it is pumpkin pie mix and not pumpkin puree)
  • 1/2 cup tomato sauce
  • 1/4 cup nutritional yeast
  • 1 tsp. onion powder
  • dash of chili powder
  • pepper

note: Cook the pasta and create the cashew cream first. Also, make sure that you are buying pumpkin pie mix and not just pumpkin puree, the pie has extra seasonings that really help create the flavor for this recipe. 

For the cashew cream:

  • 1 cup raw cashews (soaked for at least 4 hours)
  • 1 tbsp fresh lemon juice
  • 1/4 cup of water

Directions: In a high-speed blender, blend until a thick creamy sauce is formed.


For the pasta:

  • 8 oz box of gluten-free (Ancient Harvest) linguine (use any 8 oz box of your choice!)

Directions: Add pasta to 4 quarts of boiling water and stir frequently. Cook uncovered for 6-8 minutes and drain.

Creamy Pumpkin Pasta Recipe:

First, turn the stove on medium-high and heat a nonstick pan. Saute the garlic for about 3 minutes. Next, add the mushrooms to the pan and saute for about 4-5 minutes. Put about a splash of water into the pan and add the spinach, saute for about 30 seconds to a minute. Now, add the cashew cream, 1/2 cup of pumpkin pie mix, 1/2 cup tomato sauce, 1/4 cup of yeast, 1 tsp of onion powder, the dash of chili powder, and pepper to taste. Mix the sauce for about 1-2 minutes until it is thick, creamy, and well heated. Lastly, mix the pasta into the creamy pumpkin sauce. Grab a bowl and enjoy!
