Normally I am so lazy when it comes to beans. I open up a can, drain and stir it into whatever dish I’m making. I decided to spice things up and make some yummy seasoned black beans that suit my lazy lifestyle. They were surprisingly really delicious, tasty enough to share with you!
Ingredients
1 can black beans
1/2 yellow onion (diced)
2 garlic cloves (minced)
1/2 lemon cut into 2 pieces
1 bay leaf
1 tsp red pepper flakes
2 tsp dried cilantro
few pinches of cumin
few pinches of oregano
1 tsp apple cider vinegar
3/4 cup of water
salt and pepper to taste
Directions
Seriously, brace yourself this gets complicated (sarcasm)!
Add everything to a medium-sized pot. Bring to a boil for about 2-3 minutes. Lower the heat and cover, simmer for 15-20 minutes!
Sooooooo simple and sooooooooo delicious! I whipped up some guacamole, made Spanish rice, chopped lettuce, added chipotle salsa and toasted some tortillas for a complete meal with these beans.
