If you are craving something that is chocolatey, chewy, and oh so delicious (yet still on the healthy side) these babies are the right dessert for you! This is a recipe that I make at-least once a week. These,seriously hit the spot and they are so simple to make!
Sweet Potato Brownies
- 1 large sweet potato
- 10 tbsp. coco powder
- 6 tbsp. organic cane sugar
- ½ cup pecans
- ½ cup oats
- ¼ cup vegan chocolate chips
- chocolate icing (optional, I used the brand Duncan Hines Classic Chocolate)
First, Preheat oven to 420 Fahrenheit. Wash sweet potato thoroughly, using a fork poke holes into sweet potato. Place on an oven rack lined with parchment paper. Cook for 55 minutes until soft. Take out of oven, let cool. Once the sweet potato cools down, peel the skin off. If you feel extra lazy, you may peel and boil the sweet potatoes until they are soft, I find that baking them first makes the brownies much more sweet.
Next, in a food processor pulse the pecans until they form into a powder. Then, add the oats and pulse until powder formed as well. Add the remaining ingredients into the food processor until you create a brownie batter. (If you cannot or prefer not to eat nuts instead double the oats to 1 cup.)
Lower the oven to 355 Fahrenheit. Place batter in a baking pan lined with parchment paper. Cook for 25 – 30 minutes. Take out of the oven, let cook, and serve! You may layer on a topping of your favorite chocolate vegan icing if you wish!
