Today I got an itch, an itch of creativity. My soul was driven to the kitchen and I put my everything into a creation that turned out to be divine. My husband will eat literally anything as long as it is vegan. Throughout this two-year journey of being vegan, we have tried a variety of store-bought veggie burgers as well as a couple of homemade ones. I was told that this patty was by far “The best damn veggie burger”. It is only right that I share this recipe with the world. Here you go folks, enjoy!
Sweet Potato, Black Bean Burgers










Ingredients
- 1 can of black beans (drained and rinsed)
- 1 medium-sized sweet potato
- ¼ green bell pepper (diced)
- ½ small yellow onion (diced)
- 1 garlic clove (diced)
- 1 cup oats
- ½ cup panko breadcrumbs
- 1 tbsp. chili powder
- 1 tbsp. oregano
- ¼ tsp. cayenne pepper
- 1 tsp. paprika
- 1 tsp. Mrs. Dash Southwest Chipotle
Directions
1.) Peel and chop the sweet potato. Boil sweet potato until it is soft (this takes about 8 minutes).
2.) On medium heat in a non-stick pan sauté the onion, garlic, and bell pepper until they are well done (soft, not burnt).
3.) In a food processor, pulse the beans and oats until it turns into a crumble. Add the sweet potato and all the seasonings. Blend on high until everything is well combined.
4.) Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper. Place the breadcrumbs in a bowl. Take a handful of the “meat” and roll into a ball. Flatten the ball out to create a patty. Coat each side of the patty with breadcrumbs by dipping it into the bowl, the patty is already sticky the breadcrumbs should have no issues sticking to them. Do this for each patty, I made 6 patties. Set the patties on the cookie sheet.
5.) Put the patties in the oven, cook for 15 minutes than flip them and cook for another 10 minutes. Remove them from the oven and let them cool.
You may put them on your favorite bun or bread, in a wrap, on top of a salad, or eat them as they are. They last a couple days in the fridge, or you may freeze them and have later on for an easy meal.
